The Caro-Kann Structure
Your defense to 1.e4: the Caro-Kann (1...c6, then 2...d5). The idea in one line: fight for the center with d5, SUPPORTED by the c6-pawn instead of the e6-pawn.
Why it suits improvers: the structure is solid, the plans are the same every game, there are few forced tactics to memorize — and unlike the French Defense, your light-squared bishop gets OUT before the pawn chain closes.
